Today marks 5 years ago we filed our first step in our adoption process. I cannot imagine our lives with out her. I am so thankful God pushed us to take that first step so we did not miss having her in our lives. Forever Family!
Here in Va the weather is so very unpredictable. Take for instance yesterday it was sunny and 60 plus degrees out. Today it is cold and we are expected to get 6-8 inches of snow tonight. I have just stopped trying to figure it out and learned to enjoy the variety. That is just what we did yesterday when the temps were high and the sun was shinning!

This past weekend Daddio and I had a weekend away. It was a celebration of our 16th Anniversary and My Birthday combined. We went back to Corolla, NC to an Inn that is just delightful and relaxing. It has the most gorgeous sunsets as it is right on the sound. This year we only got a peak of one because it was cloudy and grey. We had a wonderful trip and enjoyed some fun time together.

Family Rocks!!

A couple of weeks ago when my sister was in we had all of the grandchildren here in one place. This does not happen very often so we had to take advantage of it and get a formal photo for my parents. Well I knew if I successfully captured all 18 kiddos ages ranges from 6 months to 17 years then I definitely would earn some bragging rights. Let me just say my patients, sanity and my Christianity was all tested that day. My equipment was put to the test as little toddlers danced around my light stands and umbrellas. YIKES! But... Just take a look at what I managed to do:

This year we have decided to try something new! A Garden:) Not your average garden but a garden that will allow you to grow a lot in a very small space. It is called Gardening by the Square Foot. With the cost of fresh veggies and the amount of chemicals they put into our produce we knew it would be a huge benefit to try it. Daddio is very excited to start this new adventure and got a head start of building the boxes for it. He even had a little help!

We will have about 5-6 of these which hold 16 squares of different plants. And one extra smaller one that will be just for the Princess for flowers.

And we will fill them with the compost that we will make and store in this along with some soil and peat moss.

Since today is Thursday, which means almost the weekend and THAT makes it so Sweet! I am sharing a great Cookie Recipe that makes Toll House seem like yesterdays news. Really, I am not kidding at all! This is the best Chocolate Chip Recipe that you will ever find. I found this on one of my favorite blogs Lovin From the Oven! She tries out great cookies and cupcakes and then post how they turned out. I have made many of her recipes but this is by far the best find yet! (okay maybe it is a close tie with the smores bars yummo) Valentines is coming up quick and this would be a great way to tell the ones you love they are special.

2 cups all-purphose flour (going along with my NY resolution I use 1 cup unbleached flour and 1 cup whole wheat flour)

1/2 teaspoons baking soda

1/2 teaspoons of salt

3/4 cup of butter, melted

1 cup of brown sugar
1/2 cup of white sugar (instead of using both brown and white sugar I used sugar in the raw 1 1/2 cups)

1 tablespoon of Vanilla

1 egg

1 egg yolk

2 cups of semisweet chocolate chips

Sift together the flour, baking soda, salt and set aside
In another bowl mix butter, sugar until creamed then add the vanilla, egg and egg yolk until light and creamy. Mix in the sifted ingredients until just blended then hand stir in the chocolate chips. Refrigerate the mix for at least one hour. When ready to bake pre-heat oven to 325 degrees F. Drop spoon fulls of dough on cookie sheet and bake for 12-15 minuttes or until edges are lightly golden. Allow to cool on cookie sheet for a few minutes then move to cooling rack.

Our Goodbye

Like all good things they must come to an end! My sister and her lovely family returned back home last week. My week has been very quiet with the kids back at school from winter break and now they have gone too! Although the floors in my home made a huge sigh of relief they too are missing the many feet that ran, walked and crawled across them in the previous weeks. We had a wonderful visit and I am thankful for all the moments we shared. I now am looking forward to the summer when we will see them again!

We started the day off by hanging out one last time before we went of to the airport!

This is the first half of the family on the escalators! See the guy checking us out? We are so use to people staring when we ever go anywhere as a group. There are just so many stinking kids and people stare trying their best to figure it out.
